San Nicola Farm stretches for 40 hectares over the flat countryside of Torre Santa Susanna surrounded by an unspoilt nature, far from industrial settlements.
The olive groves host different varieties of olive trees: Leccino, Franotio, Coratine, Nociara, Nardò; they’re cultivated exclusively with organic methods: olive trees are grown with traditional pruning systems, there’s a continuous cultivation of the land in order to protect it from weeds, we exclusively use organic fertilizers, the parasiticidal treatment is carried out with methods that respect the environment and avoid the use of phytodrugs to safeguard the biological balance of nature, oil extraction is carried out with mechanical and physical processes to obtain oil with no adulteration of the qualitative characteristics contained in the olives.
